I cook a lot with shrimp because I love shrimp. One of my favorites is coconut shrimp that you dip in that slightly spicy cocktail sauce….delicious. I didn’t manage to find/or buy cocktail sauce so we ended up just using ketchup but it wasn’t that big of a deal.
Ingredients
- Shrimp
- Coconut Flakes
- 2 eggs
- Flour
- Panko (or bread crumbs)
- Salt n’ Peppa
- Oil (to fry)
- Rice
- Bag of frozen vegetables if you are lazy or you can choose your own veggies *this is for fried rice
- Onion
- Garlic
- Ginger
- Soy Sauce
Steps
FOR THE SHRIMP: BOWL 1: mix flour, salt, pepper, any other spices you wish. BOWL 2: beat 2 eggs. BOWL 3: mix panko and coconut flakes. Fill your frying pan with oil and heat it up, you will then add the coated shrimps, do it in this order: flour bowl, egg bowl, panko/coconut bowl. Fry and then set on paper-towel for it to soak up the oil.
FOR THE RICE: Chop up onion, garlic, ginger, and sautee with oil in a pan. Add the vegetables, cook until they are slightly soft, and then add the rice and soy sauce.
