love pasta. Whenever anyone would ask me what my favorite food is my answer is PASTA! And then if they have me specify to a style I say Italian or Thai – which are both noodle heavy cuisines.

In this case it’s no surprise to me that if I sit myself down to cook something I go to a pasta dish. Usually I don’t follow recipes and just kind of throw things together – so here is a delicious creamy spinach-shrimp pasta sauce that you will want third-helpings of.

Here’s the list of ingredients and then you can follow the pictures (with short captions) for instructions.

  • garlic
  • onion
  • 3 tomatoes
  • shrimp
  • cream cheese
  • parmesan
  • spinach
  • pasta

First, Sautee the shrimp with butter and minced garlic until it turns pink and white.

Remove the shrimp from the pan and slice it up into small pieces for later. (set aside)

In the same pan, throw in some more butter and a chopped onion.

Once the onion has caramelized a bit, throw in the red pepper.

Throw in tomatoes, and add to a blender to blend. 

I don’t have a photo (I forgot sorry!) but at this step you want to add some cream cheese and parmesan (as much as you want!

Throw in your shrimp.

Throw in Spinach, and then mix everything together.

Once your pasta of choice is boiled place pasta INTO the sauce and mix. This allows the sauce flavor to get into the pasta.
