Good morning! I hope you guys are starting the day off right! For me, a good morning consists of a tall glass of water, followed by a mug of tea, and then breakfast! Today I discovered an amazing breakfast combination – eggs, tomatoes, onions, and goat cheese!

IMG_4409Start out with one pan (yes that easy) and melt some butter at the bottom of it. Crack some eggs, chop up your tomatoes and onions and place around the eggs. Salt and Pepper.

Once the eggs start cooking you can start scrambling them so that they cook evenly.

After the eggs are done cooking take them out of the pan and place them on a plate. This is so that you don’t overcook your eggs but you also don’t have raw tomatoes and onions.

The tomatoes and onions you cook to your liking. I also addedIMG_4410 some more pepper and paprika because I like my food a bit spicier. At this moment you can add whatever seasoning you would like.  Cook until brown or caramelized.

Once that is done place it on the plate as well, cut up some goat cheese (I used one with herbs in it), and toast some bread (I used pita).
